If go for a degree in english/creative writing at a community college, what will I actually be doing/studying?

Good answer, but if you really want to become a communicator, take communications or journalism. They provide better entry into non-academic positions. English majors study a lot of literature, which is good, but really does not lead to clean communication skills.
