I anticipate graduating from The University of Minnesota-Morris in May of 2008 with a Bachelor of Arts degree in Management and an emphasis on Global Business. I have a working knowledge of Spanish from having attended language school in Mexico, and would like to spend some more time in the country so as to gain more international experience and improve my language fluency. I sense that securing entry-level employment in Mexico is probably next to impossible except in the case of accepting low-paying English teaching jobs (although do correct me if I am wrong), so I was also wondering if perhaps searching for an internship is a more viable and realistic option. Do you have any suggestions?

Without having specific information for your case, I can tell you that with a degree in business, you can do well in a country like Mexico. I was just there, spent a year in that city after I finished my degree in Linguistics. I was teaching English and youre right, you dont want to be an english teacher. YEt, having been there, I saw the enormous area of business. Mexico is increasingly international in commerce, especially since many foreign companies are opening branches there. Even with little SPanish, you could succeed. Oftentimes, English is the working language in major companies. When I was there, I was encouraged to apply to international companies, but my total lack of business knowledge intimidated me and I didnt do it. Still, having criticized English teaching jobs, if you are at the right school (meaning teaching middle-upper class students) you can make good connections especially in business. I left cause I was starving, and I couldnt get used to the disorganization, corruption and backwardness of mexico, specifically Guadalajara. Trust me, its a disaster, that city. You should go to another one, Mexico city, its way more interesting and beautiful, although it is more dangerous. Stil I wish you the best. Have you tried looking in local companies which have branches there?
